LINGUINE WITH FRESH BLACK TRUFFLE MELANOSPORUM
PASTA & TRUFFLES
Cooking with fresh truffles is quite simple, you just have to follow a few simple steps and the result will be an amazing dish full of unique flavour.
Recipe is for 2 persons.
- Linguine with Black & White Truffles 250 g
Smooth flour or Starch 10 g
Butter 20 g
Wegetable stock 200 ml
Grana Padano Cheese 20 g
Melt the butter over low heat.
Add flour (or starch), mix it, pour over vegetable stock, add salt and pepper and grate Grana Padano cheese and black truffle Melanosporum.
Mix all together.
Add butter with white truffle and melt it into the sauce.
Linguine (pre-cooked in salted water) add to the sauce and boil briefly.
Finally grate a few fresh truffle leaves.
