Directions
Cut peeled potatoes into fries, place them in cold waterand leave sit for an hour.
Dry with a paper napkin.
Heat oil to 160°C and fry the potatoes.
Spice warm potatoes with trufflespice and serve with truffle ketchup and mayonnaise.
